As the crisp autumn air begins to settle over New Mexico, there’s no better time to head out for a peaceful fishing trip at Elephant Butte Lake. Located 62 miles south of the Buckhorn Tavern, this stunning lake is a haven for anglers looking to reel in some fish while surrounded by the beauty of fall. This trip was made even more memorable by borrowing a camper (Thank you Donald and Pam!), making for a cozy and convenient home base for our adventures.

A Picturesque Fall Setting Elephant Butte is the largest reservoir in New Mexico, offering miles of shoreline and ample opportunities for fishing, boating, and relaxing. The fall season brings vibrant colors to the trees and a quiet serenity to the lake, with fewer crowds and cooler temperatures perfect for a comfortable fishing experience. We were excited to cast our lines and take in the stunning views of the surrounding hills and the vast, reflective waters.

Fishing in Elephant Butte Whether you’re an experienced angler or a beginner, Elephant Butte offers great opportunities for both. The lake is home to a variety of fish, including largemouth bass, catfish, and walleye. We spent our evening casting from the shore.

If you’re new to fishing or just looking to improve your technique, there are plenty of local guides available for hire, making it easier to navigate the lake and increase your chances of a successful day on the water.

The Joy of Camping in a Camper One of the highlights of our trip was borrowing a camper for the weekend. The cozy interior provided all the comforts of home—complete with a warm bed, kitchen, and bathroom—while still offering the outdoor experience of being right next to the lake. We set up camp a little up the hill to allow space for the two dogs.

We sat around the campfire, roasted marshmallows, and enjoyed the peaceful sounds of the lake as the stars lit up the night sky. Great S'mores Recipes No camping trip is complete without s'mores, and we couldn’t resist getting creative with some fun variations of the classic treat. Here are a couple of recipes that will take your s'mores to the next level:

  1. Peanut Butter Cup S'mores:

    • Ingredients: Graham crackers, marshmallows, milk chocolate, and mini peanut butter cups.

    • Directions: Instead of using just chocolate, place a mini peanut butter cup on your graham cracker and top with a roasted marshmallow. Add the second graham cracker to complete the s’more. The creamy peanut butter adds a delicious twist to the classic.

  2. S'mores with a Twist of Coconut:

    • Ingredients: Graham crackers, marshmallows, milk or dark chocolate, and shredded coconut.

    • Directions: After placing the chocolate on the graham cracker, sprinkle a little shredded coconut before adding the marshmallow. Toast the marshmallow and sandwich it between the crackers. This tropical twist is sure to impress!

  3. Caramel Apple S'mores:

    • Ingredients: Graham crackers, marshmallows, caramel sauce, and thinly sliced apple.

    • Directions: Spread a little caramel sauce on your graham cracker, then add a few slices of apple before the chocolate and roasted marshmallow. The apple adds a crisp, refreshing contrast to the gooey s’more.

Helpful Tip for Your Camper Getaway: If you plan to borrow a camper for your trip, be sure to check for availability early, as they can be in high demand during the fall months. Make sure the camper is equipped with all the essentials, including a good heating system for cooler evenings. And don’t forget to pack a fishing rod, tackle, and plenty of snacks—there’s nothing like enjoying a leisurely day of fishing followed by a warm meal in your cozy camper.

We left feeling refreshed, with new memories made by the water, a catch that made the trip even sweeter, and s'mores recipes that will definitely be making an appearance on future camping trips. If you’re looking for a fall getaway that blends the beauty of New Mexico’s outdoors with the comfort of home, Elephant Butte and a camper are the perfect combo.
